My Breakfast Protein Muffins

Makes 12

90 gms oats

90 gms Scitec protein powder or any other brand – I find this mixes well

Frozen Raspberries

1 teaspoon baking powder

Cinnamon to taste, optional

Water to mix

Start by placing two frozen raspberries in the bottom of your silicon cup moulds

In a mixing jug add all dry ingredients and mix really well then slowly add water to the dry ingredients until you have a thick pancake type mix.  Pour into silicon moulds and then bake at 180 for 15 to 20 minutes or until firm.  I found practice makes perfect with this recipe based on which brand of protein and oats you use but believe me once you nail this you will be hooked on these.

Variations – add grated carrots and ground spice and replace raspberries with rehydrated raisins and you have carrot cake muffins.  Get creative in the kitchen and you won’t get bored with your food…
